Re: China is the Enemy
Wow, the NBA player take on china continues to dazzle. I never thought our sportsball players would piss away their credibility quite this fast. Next time Lebron protests a cop killing somebody send him $5 cause that appears to be his per capita rate to shut up about injustice.

Re: China is the Enemy
My wife and I dicussed China the other day. I was a bit surprised to see I did not have to spend any effort persuading her; she had already decided we will not use any app the Chinese govt touches and to avoid electronic devices made in china as much as possible. Her employer is very security consci...

Re: China is the Enemy
I'm starting to think punishing tariffs that cause our buying to shift to other than China might be worth the pain. China is not interested in joining the community of nations. It is interested in following the rules when it disadvantages you and breaking the rules when it advantages them.

Re: Cookbooks
It does illustrate one of the many ways in which electronic shit can never truly replace books. Nobody is going to leave little Dathan grandma's Chrome bookmarks in the will. The web is great at immortalizing things lots of people care about, but undependable if it matters to just a few. Like, it's...

They are useful, we do use the Milk Street Kitchen website (accessible with a magazine subscription) as it's about the only magazine I've seen that consistently has multiple recipes that look interesting every issue. Every Milk Street recipe I've tried has been RIDICULOUSLY over-seasoned and over-s...

Re: Cookbooks
JMO but cooking websites are generally superior to cookbooks at this point. Once Upon a Chef is pretty much excellent across the board. Start with the steakhouse burgers. They are useful, we do use the Milk Street Kitchen website (accessible with a magazine subscription) as it's about the only maga...

His concentration on communication of technique is one of the things that make him such a treasure. He's worth a dozen Food Network "celebrities" put together.

Yes, and he's very watchable. Those months I was pouring dinner into a tube in my stomach I would watch him every day on PBS and imagine eating food again one day.
But I still like to have books.

New Complete Techniques? You would not go wrong with that either, what i have is Essential Pepin. 700 recipes plus a DVD of demonstrated techniques. I will probably buy the other too, though i expect some duplication, just because they have been out long enough to be available quite cheaply now.

Re: Cookbooks
Jaques Pepin has an encyclopedic book of techniques/dishes you might want to check out, as well multiple straight cookbooks. I very much like his approach to food.

Don't forget the movement to ban kitchen knives with points as well. Evildoers will just give up faced with the task of finding a file or a flat patch of concrete, or sandpaper. That's why there are no weapons in prisons.

I don't see trump agreeing to send any transcript this fast unless it's not going to help the Dems. One thing you have to admit is he usually has no problem just denying anything no matter what anyone else says.

Schlegal, you're absolutely right. My new knives arrived the other day. What a pleasure to dice onions, chop carrots etc. I used to avoid cooking dinners that involved a lot of knife skills. Now I'm looking for recipes that require a knife work. As a guy who worked with subpar knives all his life, ...

Seeahill, you have chosen wisely. My set is Henkels, as my dad is partial to them and they were a gift from him some quarter century ago but Wusthoff is up to snuff as well. Germany has been producing quality blades for a thousand years, the best surgical steel is still bought from Solingen factorie...

Funny you should mention Austro-Hungarians... I used to cook alongside a Hapsburg. The son of one of the ex patriate arch dukes. We went to college together and worked part-time in the same kitchen. That reminds me, I love a good goulash but have not made one in a while. When my dad was younger and ...

Re: Coach Chef
What do you like to cook Schlegel? Well I have little kids, so the cheap answer is "quick food". Most important real answer would be be fresh food, cooked well and served promptly. Big influences would be the French chef tradition like my father was trained in (Escoffier was his bible) but I borrow...

Chef Shlegal, What knives do I need for kitchen work. And how do I keep them sharp ? Well, actually... I do have opinions on this topic, if you really want to know. Better knife skills and a quality set of knives is probably the first and most fundamental thing I'd recommend to the home cook to mak...

I could go into that, i mean, at least i did cook for a living for some years. Heck, my bio would look great! Dad was a European chef, with small family farm. Worked in private club my mom managed on weekends. More cooking after i moved out. Chem degree specializing in biochem. Asst. Winemaker after...

I have no idea if he's right or not, and don't watch his channel in part because I find his Euro/atheist bias grating, but he very specifically did not say that. Culture/corruption figures prominently. I work with many immigrants, and the ones from Africa and the former USSR have both said one of t...

...prefer capable people... My relatives ended up in the coal mines. They had strong backs and a willingness to work. Similarly, we need workers with a willingness to gut chickens and hogs for chump change, or make tortillas 10 hours per day. Along with stealing the best and brightest of our foreig...

LOL @ white supremacy dude there's no such thing. Some administration dude was just on TV saying that the poem on the Statue of Liberty was meant for Europeans. Cucchinelli is an asshat and I am proud to have voted against him every chance I got. BUT... he literally was only stating the truth, that...
