Cheap good meals

Lately I've been doing this

2-3 cups of milk
A banana
A heaping spoonful of peanut butter
Frozen blueberries (eyeballing it, maybe 2 cups)

About 3$, lots of protein, filling and delicious.

whopper, with fries of course.

large dr. pepper.

then i stop for gas, so i can grab a couple of little fruit pies in a box.

large coffee black, which revs the metabolism so i burn off any bad stuff that might have slipped by quality control.

Slow cooker and fried rice. If money for groceries were scarce, that's all I'd eat and I'd eat pretty damn well.

I've started cooking with a lot of ground meat - I can get bison/elk/etc. at a Sprouts Market nearby that's no more expensive than most ground beef so I mix and match.

Lazy bachelor cooking - 6-8oz of ground beef in a cast iron pan with garlic/spices/etc., remove, throw in zucchini noodles/cauliflower rice (despite being paleo approved both are awesome) or broccoli or basically any vegetables I have on hand, saute until softened/done/whatever you want to call it.

I mean, it's not going to win any culinary awards and probably won't get me laid (unlike the THC chocolate I made yesterday - I fully expect even DIY chocolate to be a panty dropper) but it's good, filling, realatively cheap and easy. Beats the bejesus out of the dry chicken breasts I ate in the past.

Also fairly cheap and tasty - Aidell's pork andouille sausage. Regularly $5 for four links at my local grocery store, two is plenty for most people. Pre-cooked so you just throw it on a grill or in the oven to heat through and brown the exterior. $2.50 for dinner protein isn't living on beans and rice territory, but if you're not selling plasma to pay rent I don't think it's too bad.

Avoid the chicken sausage and meatballs, they're dry and awful.

I go with boneless chicken thighs - you've just got to remove the bones and skin at the end anyway, if you want a little of the collagen-y goodness of using bones, mix in a touch of unflavored gelatin before you cook.

For me, the secret is to cook bone-in chicken thighs for 12 hours on high at least-- that's the amount of time it takes for the gristle to liquify in my crock pot. Not sure if they're in this thread, but lie-Nap's bone broth recipes are the shizzle.

I'd agree with the beans. Just froze a very good vegetarian, curried black bean soup. Smoked ham hocks are crazily cheap, but my wife is veggie. Hell, ham hocks are cheaper than the smoked paprika I use to make up the lack of smoky meat in her stuff. Throw all the different kinds of beans and you've got serious options. Plus, you can customize the add on toppings. In my bachelor days I had a great party with black bean soup and bowls of caramelized onions, bacon, sour cream, cheddar, scallions, fried shallots, pickled red onions, croutons.

Eggs are also cheap and infinitely customizable. Baked eggs en cocotte, soft, hard, omelettes, gratins, souffles.

Bread making is also cheap and variable.

Biggest thing I found while poor was getting variety out of a few ingredients. Eggs, beans, homemade bread will do it.

Oh, and my go to healthy desert is frozen blueberries with milk poured over top. The milk freezes and makes a purple slush. Delish, but eat with a sweatsuit or under a blanket, you'll get chilly.

Pot Roast
*2lb top roast
*chopped carrots
*chopped onion
*chopped potato
*diced celery
*minced garlic
seasoning = salt, pepper, basil, Capt. Morgan (rum), A1, red wine
3 cups (ish) boiling water
Slow cooker for 12 hours, cost = about $15 (less, of course, if you have stuff lying around, or if you buy cheaper meat), servings = about 8

Fried Rice
* 1 cup cooked rice (if cooked the day before and cooled in refrigerator, it will be less sticky)
* 1 cup frozen mixed veggies (thawed)
* 1 cup frozen stir fry peppers (thawed and diced)
* minced garlic
* meat (bacon or pork or chicken or beef)
*salt, pepper (optional seasonings - grated ginger, tumeric, sriracha sauce)

In wok, add thin layer of oil, heat, sauté meat, add peppers & garlic, then mixed veggies, then rice, then seasonings.
cost = $5-10
servings = about 4

Crockpot on high; put as many boneless chicken breasts as you fit; add in some taco seasoning or BBQ sauce, a touch of chicken broth and let it cook. Shred it when it's done and make tacos or BBQ sammiches with it, depending on how you fixed it. Throw in a piece of fruit or something as a side.

Cheap pork roast in a crock pot, with a jar of jalepenos, a pack of fajita seasoning, cover with water and cook all day. I prefer to eat it like a soup with toasted tortillas but the wife and kids prefer fajitas.

Black beans and eggs. Black beans and cilantro lime rice.

I can attest to the validity of both these dishes. The lime rice recipe eludes me though..., Amazon wrote this down but I lost it...it's worth posting up
