Quinoa

I guess you're supposed to pronounce it Kween-wa. Whatever.
This shit is teh bomb. I can count on one finger the number of "grain replacement" foods that I've actually liked. I can't stand no-wheat breads (though I haven't tried coconut flour bread) and spaghetti squash is fine, just not with marinara sauce and meatballs.
Quinoa, though, is really good. I'm tempted to say I even like it better than oats. Of course, 3 hours later I really like it better than oats, which is why I tried it in the first place.
It's texture is good and taste is great. I prep it almost exactly like oatmeal in the morning.
After several tries, here's my latest way of prepping.
Boil some water - fuck measuring, just half a pot or so
Once boiled, toss in some Quinoa and lower to simmer.
In about 10 minutes or so, the little beads will have burst, that's the "done" signal
Strain the whole thing and rinse with water - supposedly the tannins need eliminated.
Put it back in the empty pot and add some coconut oil, milk, walnuts, cinnamon, nutmeg, bananas, etc...
Add a few drops of stevia.
Top with honey.
Fuck, that's good.
