Quinoa

I guess you're supposed to pronounce it Kween-wa. Whatever.

This shit is teh bomb. I can count on one finger the number of "grain replacement" foods that I've actually liked. I can't stand no-wheat breads (though I haven't tried coconut flour bread) and spaghetti squash is fine, just not with marinara sauce and meatballs.

Quinoa, though, is really good. I'm tempted to say I even like it better than oats. Of course, 3 hours later I really like it better than oats, which is why I tried it in the first place.

It's texture is good and taste is great. I prep it almost exactly like oatmeal in the morning.

After several tries, here's my latest way of prepping.

Boil some water - fuck measuring, just half a pot or so
Once boiled, toss in some Quinoa and lower to simmer.
In about 10 minutes or so, the little beads will have burst, that's the "done" signal
Strain the whole thing and rinse with water - supposedly the tannins need eliminated.
Put it back in the empty pot and add some coconut oil, milk, walnuts, cinnamon, nutmeg, bananas, etc...
Add a few drops of stevia.
Top with honey.

Fuck, that's good.

This and couscous make up a fair amount of the carbs I eat. You can pick it up at Trader Joe's pretty cheap, also good served cold.

I grew up with a serious antipathy to Quinoa, but it can be very pleasant when it's prepared nicely. I like it in a salad form tossed with lime, olive oil, cilantro, black beans, peppers, and fresh corn. My bitch makes a mean pot of it; she learned it from my moms who was diagnosed as coeliac a spell back.

We use it as a replacement for bulgar wheat in tabouleh, and eat it with most meals that would call for rice. It has a better flavor than rice or pasta, and it's better for you.

The red quinoa, however, is somehow different and has unpleasant effects on me.

Got a fifty pound sack of it from Canada. http://www.quinoa.com Just under four bucks a pound shipped to my door.

If you're sporting and it's cold enough where you are you can also grow it. I have about a third of a pound of seed from this fall. Leaf miners are murder on it. Bio-neem for the bugs and netting for the birds disposes of any problems I saw here.
