tripe tacos

local mexican joint called tacos tumbras sells tacos for $1.50 off their truck. they've got the usual selection of meat, plus tongue and tripe, which are pretty uncommon here in eastern washington. i tried the tongue and tripe today. tongue is great in tacos, but tripe might be the best thing i've ever had in a tortilla. juicy and tender with fantastic salty, meaty flavor. i don't know if it was beef or pork, but i am tempted to say pork because the flavor was so rich.
