Those of you who cook ribs for 4 hours or more, who cook a pork butt for 18 hours, who study the art and stay up all night with the fire:

You make the best BBQ.

But I can make it 90% as good in 2 hours.

Why in God's Green Earth would I stay up all night with the fire? That's pretty dumb. Just put enough damn charcoal in the BGE, lock in the temp, and go to bed.

And I quite doubt your pulled pork is half as good in 2 hours.

My actual time investment is about a quarter of that, and it's worth the 17 hr wait time.

Oh, yeah, and the 10 pounds of pulled pork make sammichs, green chile, pork tacos etc....

It's all good, I love real BBQ but it's not our specialty. But we do have grilling weather 365 days a year.
