With Israel having a monopoly on nukes in the region, they have the threat of nuking other countries to fall back on if a conflict escalates. If Iran gets a nuke, they lose that monopoly and risk being nuked themselves if they use a nuke. They will have to exercise more restraint in their affairs with neighbors.

I think Israel is likely more motivated by the above than by any real fear that Iran will risk its own annihilation just to lob one or two primitive bombs at Israel.
